Avocado Toast with Blistered Tomatoes and Burrata
1 ripe Mission avocado
2 slices sourdough bread
½ tsp salt
2 tbsp olive oil
1 cup cherry tomatoes
1 large ball of burrata cheese
1 tsp red pepper flakes
Toast slices of bread using your favorite method. Using a fork, smash ½ ripe avocado along with salt on each piece of toast.
In a large skillet over medium heat, heat olive oil until glistening. Add in cherry tomatoes and allow to cook, without stirring, until tomatoes begin to burst, about 3 minutes. Continue cooking for another 3-5 minutes until tomatoes are blistered.
Divide warm tomato mixture, spooning it onto the prepared avocado toast. Tope with half of the burrata and red pepper flakes. Serve immediately.
