Creamy Chocolate Avocado Pudding
2 ripe Mission avocados
1 ripe banana
½ cup cacao powder
1 cup coconut cream
½ cup raw honey
1 teaspoon pure vanilla extract
1 generous dash unrefined sea salt
Extra coconut cream for topping, optional
Dark chocolate shavings or mini chocolate chips for garnish, optional
Combine all ingredients in a food processor and process until smooth, pausing to scrape down sides a few times.
Check to make sure avocado and banana have been fully incorporated before serving.
Optional: serve topped with a dollop of coconut cream and chocolate shavings or mini chips.
Store pudding in the refrigerator for 3-5 days.
